Ooh la la! That’s all my taste buds are chanting as I walk by the local bakery, wishing that somehow my metabolism and waist line would end their love-hate relationship. But with the ongoing dilemma of weight gain after a certain age and trying to be a good role model for a toddler boy whose eyes are always watching my every move – it was time to pull up my cooking sleeves and start this oh-so sweet journey.
With the wheels in motion and a kitchen splattered with flour my experimentation lead me to a recipe my friend had lent me not so long ago. With a few changes here and there, our little family was able to indulge in savoury flavours without the guilt trip.
So let’s get started already! Ready, Set, Bake!
– 1 egg
-1.5 cup of rolled oats
-1 +1/2 cup of blended rolled oats
-1 cup chocolate chips
-2/3 cup of organic almond butter
-2/3 cup of organic maple syrup
-4 tbsp. coconut oil
-1 tsp. vanilla extract
-0.5 tsp. baking soda
-0.5 tsp. baking powder
1-Preheat the oven to 350
2-Line 2 baking sheets with parchment paper
3-Use this order, to add the ingredients into a bowl
a) almond butter + maple syrup + coconut oil & whisk to your heart’s content
b) egg + vanilla extract + baking powder + baking soda + salt & beat to your heart’s content
c) ground oats + blended ground oats + chocolate chips & mix to your heart’s content
4- Place your 2 baking sheets into the oven for 12 minutes
